Creamy Mascarpone Dessert

In Italy they wil just mix creamy light cheeses like mascarpone with just a bare bit of sugar, egg yolk custard, sweet spices, citrus zest, and chocolate. If you have ever tried one of these cheese desserts, you'll know that they're very good. 


  • 2 cups mascarpone cheese
  • 1/4 cup sugar
  • 4 egg yolks, beaten
  • 2 tbsp heavy cream
  • Pinch of kosher salt
  • 1 tsp finely grated lemon zest
  • 1/2 tsp freshly ground cinnamon
  • 1/2 tsp freshly ground cloves
  • Cocoa powder

    Create a makeshift double boiler with a large stainless steel bowl and a pot with 1 inch of water at a simmer.

    Beat yolks until light and creamy in the stainless steel bowl while it is still cold. Place bowl on top of pot and cook, stirring nonstop, until eggs thicken and fall off the whisk in ribbons. Set aside until needed.

    Combine egg yolks and remaining ingredients except for cocoa powder.
